This is what I settled on to try first, and you were right... Exactly what I was looking for.
Basically a moisture wicking polo shirt body, just with dress shirt collar and sleeves (with traditional button cuffs) attached. With external armor on my torso, nobody can tell it isn't a normal dress shirt, but it keeps me a lot cooler and drier under the armor.
A little pricey at ~$60 a pop, but worth it for the added comfort. I grabbed a couple now, and am going to wait to see if there's a July 4th or Black Friday sale later to stock up on more.

4MUL8RThompson Tee is an excellent tee shirt with moisture absorbing pads in the underarm area. They last for years.

Russ59Take a look at "&Collar".
I have a couple of their longsleeve white, full button dress shirts. Fit well and breath nicely.

BMRCheck out the Michael Strahan line sold by Men’s Wearhouse. I’ve got several of these in both long and short sleeves. In the summer months I come back from going to the gym at noon and often times have a soaked cotton shirt. That’s not the case with these shirts. They often have them on sale marked down quite a bit.
