Friends, Romans, Countrymen, Lend Me Your Deviled Egg Recipes...
I've got a hankering for some exotic Deviled Eggs. Inlaws on the wife's side our coming over, and they complain about everything I make. So I'm partial to ideas.

I wanted to make a Prime Rib. Nope, they want ham. I offered to smoke the ham. Nope. They want it done in the oven.

I'm not open to anything insanely hot, but don't mind something a little spicy.

Maybe Deviled Eggs with Chopsticks?

Sister in law complained about my twice baked potatoes. Said they were undercooked. How is it possible to undercook a twice baked potato?

I'm just going to give them a menu, ask them what they want me to make. If they don't like it, I'll give them a Chinese takeout menu.

I made some with Benton’s bacon and they were sublime.

Cook the bacon until crisp, save the grease and let congeal a bit. Process your egg yolks, Mayo, mustard, a good tablespoon or two of the bacon fat, salt, pepper, dash of cayenne in the food processor.

Pipe yolk mixture into egg halves using pastry bag with large star tip. Top with chopped crispy Benton’s bacon. YUM!

Smoke the egg after boiling and deshelling them. I don’t like deviled eggs but my bil did this over Thanksgiving and everybody liked them.

In my family that means paprika sprinkled on top vs plain. LOL!

I've never had any complaints when I put some smoked pork shoulder in 'em and sprinkle with dry rub. I also like to dice up some of Famous Dave's spicy pickles and add that to the mix. Wife is partial to Siracha.

A sliver of potato chip is nice on top as well for what a Food Network chef would call a "texture contrast". Wink

My wife makes the eggs with horseradish sauce. Garnished with paprika and chopped chives. The eyes of the chicks are capers with a small sliver of carrot for the beak.

I hesitate to share this because it is kinda my secret weapon for parties....but here goes. You can spice them up however you like - bacon, jalepeno, hot sauce....etc.

Don't worry with exotic, just use this recipe. A great blog too, BTW.

This is my SIL, and these eggs, though simple, are incredibly addictive. Surprised I didn't get a shout-out, she knows any time she shows up for a meal to bring some!
