The shop in town that sold this and used to come service it no longer does so. I can't find online a comprehensive service protocol.

It's starting to judder as the plates slide on the guide rods. I've cleaned and lubed the guide rods and the tension and cables with the pulleys seems correct, but I expect that there is more going to it than just eyeballing it.

Very helpful, thank you. I am still left to wonder if anyone does this on their own machines, or used to work in this field, and can provide a narrative of their experience, what to look for, what things should look like.

I have a machine very similar to yours. I have found that occasional general cleaning is adequate except for the guide bars. I clean mine quarterly (admittedly may be overkill). Make sure they are absolutely free of anything and use silicone lube sparingly. Mine work best when they are nearly dry

Judder. This speaks of what we call stick-slip friction. We formulate to avoid such noise vbration and harshness (NVH).

To avoid NVH in slow speed sliding conditions, the near static friction must be lower than the dynamic friction.

If the plates are not moving (static) and you invite them to move, high static friction works against your invitation. The cycle of sticking then slipping then sticking then slipping can create NVH.

Seek to reduce near static friction in your choice of lubricant.
