I think that part of my issue is smaller batches, allowing the dough ball to consolidate and just whip around the bowl and roller. It'll knead up great eventually, but not near as fast, or as well, as a larger amount of dough would like yours. Thanks for that pic, now I can see what it is supposed to do.

Next time I'll make a double batch and see if that works better.
