Too much to list everyone, but this is a pretty good cross section of the "regulars" I find interesting.
Bad Obsession Motorsports - check out Project Binky. 2 English guys with a very Monty Python-esque sense of humor have been working to shove the engine out of a Mazda engine into a 1980's Mini without lengthening the body. They've been at it since 2013.
This Old Tony - hobby machinist. Really interesting subject matter, and it gets better when you realize the video is a well choreographed dad joke.
AvE - sorta like ToT, but more swearing and "fly by the seat of your pants" learning. He also does a lot of tool teardown videos.
NileRed - hobby chemist (he does have a degree).
StyroPyro - see above (including the degree), except add in lasers and high voltage experiments.
ElectroBOOM - he's an electrical engineer. Part of his schtick (whether intentionally or not I can't say for sure) is that he either shocks himself or damages something in spectacular fashion in every video.
Modern Rogue - social engineering and other cool things/experiments.
BigClive - electrical engineer in the UK. Does a lot of teardowns of cheap eBay electronics.
Mike the Cop - discussion about police use of force, dash/body cam breakdown, and more.
Useless Duck Company - humorously and exaggerated overengineered solutions to problems
Cody's Lab - guy in Utah who does some prospecting and a lot of chemistry and other experiments.
Louis Rossman - he owns a third party Apple repair shop in NY. He's been a voice of the push for right-to-repair in the past decade.
Paul Sellers - master woodworker from England.
Elemental Maker - feels like AvE, but without the tool teardowns.

Well, its time someone votes for WonderHussy. She has the same hobby as I do. Rattling around off road and exploring old ruins. Not about guns or cars, but its my favorite and only youtube channel so she gets my vote.

The Flight Channel does awesome simulator recreations of air disasters. Very high quality and extremely addictive. (Note that English is not his first language.)
