Three Generations of Service |
Strawberry Shortcake a' la PHPaul Rhubarb, picked and frozen fresh last June. Strawberries, bought from a roadside stand, picked that day, cleaned, sliced and frozen fresh with a sprinkling of sugar. Mrs. PHPaul's home-made corn bread. Put the frozen rhubarb in a heavy pot (I use a ceramic-coated cast iron kettle, but straight cast iron would be fine) and simmer on low heat until thoroughly heated and cooked down to the consistency you prefer. I like mine quite thick, very little juice. Add sugar to taste. I use a bit over a quarter cup of sugar to a two quart bag of frozen 'barb. I like mine tart. TURN OFF THE HEAT, and dump in the frozen berries. The idea is to thaw them, not cook them. Let the pot sit uncovered until the berries thaw and the mixture cools. I prefer mine refrigerated overnight. Make up a bowl just like you would using shortcake, only use the corn bread. YUM! Be careful when following the masses. Sometimes the M is silent. | ||

At first glance I thought it was lasagna, but after readying, that sounds damn good. I'm a big fan of strawberry rhubarb pie, and this sounds very good with the corn bread. ________________________________________ -- Fear is the mind-killer. After reading this one this stands out, this ain't Paul's first strawberry rhubarb cornbread dessert. The man has obviously spent years perfecting this. We had a lot of strawberry rhubarb growing up as half the family had a sweet tooth like me (I'm fine with just strawberry) and the other half liked tart (they're fine with just rhubarb) so strawberry rhubarb was a great middle ground. I've only had strawberry rhubarb on pie crust or over sponge cake. Never dawned on me to try it over cornbread. Actually, it is. I did go through a few evolutions getting the strawberry-rhubarb sauce right, but I've been making that for several years. Mrs. PHPaul is responsible for the cornbread. The sauce is very versatile, good by itself, amazing over Ritz crackers (The strawberry-rhubarb version of mock-apple pie) or vanilla ice cream. Just a classic case of serendipity: "I've got sauce, and there's some leftover cornbread. Hmmmmmmm...I wonder..." Be careful when following the masses. Sometimes the M is silent. | |||

I've never had it, but I think I'd like it. My mom used to make rhubarb pies (real pies) when I was a kid. My dad's favorite pie was green gooseberry, but those weren't easy to get, so mom used rhubarb (we grew our own) as a substitute. At first glance, it look like some sort of Italian dish to me also. And doesn't strawberry shortcake have large amounts of whipped cream, and, well, shortcake?This is it's own concoction (as mentioned, strawberry rhubarb pie.) And I don't think I've ever had rhubarb.

One of the saddest things about my mom selling her old place was losing access to her huge rhubarb patch. I just can't get it to grow down here, and it's stupid expensive in the grocery. The last time I broke down and bought some, the cashier thought it was red celery. Desert looks good. I'll go the other way of some of these folks.. I prefer my rhubarb sans strawberrries. I have my own style of humor. I call it Snarkasm. | |||

Well, yes, it is a bit of a misnomer. Personally, I don't care for whipped cream unless it's REAL whipped cream and that ain't happening in this house. NEVER HAD RHUBARB??? You poor, benighted soul. Where are you located? Be careful when following the masses. Sometimes the M is silent. | |||

Not quite the same but I got a little taste of summer the other day at the Cafe. It seems a couple of apparently hot blooded young ladies decided to wear short shorts out... Something you wouldn't normally see here mid winter. My wife noticed that I noticed... Dang I miss summer... Collecting dust. | |||
