I've been increasing my fat intake and have found that my health has greatly improved. (See Keto diet thread). However, I've never been a strong meat eater and never really enjoyed steak but when I have had one I've always cut away the surrounding fat and left it on the plate.
I imagine there's enough fat in the meat itself without chewing on the surrounding fat but is tossing this in the trash a great waste of good dietary fat?

Trim the fat off and cook seperate in a hot skillet. Crisp it up like bacon and I'm willing to bet it will be your new favorite food. At least that is what happened when I did it.

I eat some of the fat. Depending on the cut, some fat is soft, and delicious, some is tough. I don't eat the tough stuff.

I like a bit of fat marbled in the steak as it makes it juicier & more tender. However, I can't stand the hard to chew fat so that comes home to my best friend (my dog)
Marbled fat usually renders nicely but the thick rubbery crap is cut and tossed period. I like meat NOT fat although I make an exception with bacon fried crisp but chewy. LOL

I eat some of the fat as it comes on a bite of Steak, like on a NY Strip. I also like Ribeye where the fat is marbled throughout the steak. Again I eat it with bites of meat. If it is just all fat I usually pass. So I guess in summary I don’t avoid the fat.

Never been a fat-eater, per se, but I like a well-marbled steak. Unfortunately, a high-fat diet isn't good for me right now, as I'm fighting insulin resistance. My liver is working overtime these days.

Like others, I love the soft, butter like fat, especially in well marbled prime cut. The hard rubbery stuff is inedible, IMO.
