I bought a nice triple cream blue / Roquefort. Tasty, decadently creamy with a nice blue flavor. Had some with a toasted croissant and an omelet.
Afterward, I planned to have some fresh sliced pineapple. The pineapple is good, had some last night.
But what a horrible combination and taste it was with the pineapple following the cheese. I don't know what it is about this combination, the cheese and the pineapple are great separately. But this is definitely a case where the sum of the parts is way less than the parts themselves.
Cheese and grapes, good. Cheese and apples, good. Cheese and pineapples, bad.
Blech.

Yep, and there's a reason for this. Pineapples contain an enzyme (bromelain) that breaks up the milk protein casein. It essentially curdles the milk or cheese. While not actually poisonous as per popular belief, it does produce a weird taste that most object to.
??? Ack. Surprised that there is no prop 65 type warning out here....
Interesting. Learned 2 things today

Fresh sliced pineapple with shredded cheddar cheese (sharp or mild - whatever you prefer) and a dollop of mayonnaise on top. A very good combination IMHO.

I think I've had that before. It is good. I wonder what is different between cheese and cottage cheese (and yogurt?) that makes the former horrible but the latter okay.

I've wondered for years why it is I like all sorts of soured milk products but can not stand any kind of blue cheese.

It took 8 minutes for the question to be answered??? Sigforum's quality of service is going down.
Seriously, I read that and thought, "SIGforum delivers again." Nicely done!

That's another mystery of life. It does take me back to my basic wondering how people knew which food was good or bad. A lot of trial and error and dead people as they learned which was poisonous or not. Then there are the poisonous food when raw but when cooked becomes delicious.
I watched a segment where I think it was Gordon Ramsey who was teaching this uneducated cook about flavors. He had him first taste separately a slice of tomato, a cheese (the kind they use for caprese), and a green thing, maybe basil. Then he had him bite all three together and showed him how the combination made a different new taste.

I love pineapple, but I've learned to eat it last because it will flat jack up the flavor of anything else on my plate.
Agree that pineapple and cottage cheese is great. Better than peaches and cottage cheese, IMO.

Maybe this is why so many are violently opposed to the very concept of pineapple on pizza. . .

If you want to perform a little experiment, try it again, but this time, use canned, rather than fresh pineapple.
The heating of the pineapple during the canning process negates much of the effect of the enzyme. It's probably why the pineapple/cottage cheese & pineapple/yoghurt mixes you can buy are palatable - the pineapple is likely processed, not fresh.

I enjoy both cottage cheese with pineapple and classic Hawaiian pizza (Canadian bacon & pineapple).
I'd been jonesing for some Freschetta Naturally Rising Crust Canadian Style Bacon & Pineapple Pizza to have on hand but the damned stuff has been out of stock everywhere locally for over 4 months. I even had emailed the factory about it.
Had to go to the local military base pharmacy to pick up <gasp> 14 prescriptions and figured WTH and stopped in the Commissary to see if they'd finally gotten some stock. WOWSER! Yup... grabbed 4 for the freezer!
As an aside most pizza joints don't offer Hawaiian pizza. If they have a pie that has ham and pineapple it invariably has a boat load of other stuff...pass. The single exception is Papa Murphy's but that entails a trip to town which I'd just as soon pass on. Hence the Freschetta which is the best of the frozen versions.
