I need a good cornbread recipe
Can anyone direct me to a good cornbread recipe? I want something that won’t be dry and won’t fall apart when I try and spread butter on it.

I’ll be cooking it in a cast iron skillet.

You want real southern cornbread or martha white style in a bag?

when I want real cornbread, then I reach for Weisnberger Mill unbolted, cornmeal, combine it with buttermilk and a 500 degree cast iron skillet, Now it's important, Cornmeal not cornbread mix.

Cornbread using Plain Cornmeal
Cornbread, Muffins or Sticks

1 3/4 Cups of Weisenberger Plain Cornmeal
1 Egg 1 ½ Cups Buttermilk (to use sweet milk, omit sugar)
1 teaspoon sugar
1 teaspoon salt
1 teaspoon baking powder
½ teaspoon soda

Preheat oven to 500 degrees F.

Mix dry ingredients then add beaten egg. Pour in Buttermilk. Fill pans after a generous greasing.

Bake 15 minutes in 500 deg. oven.

You can do white or yellow cornmeal, I like unbolted because it's a bit gritty since the grind is a bit more coarse, but I'd imagine it's a lot more like what early Americans had before we became a mechanized processing country.

Friend has been doing this "2fer" recipe in cast iron for years and years. Big Grin

Mix two cups of buttermilk, two cups of corn meal, two eggs, two tsp salt, two tsp baking powder, and two tbs of fat.
Cook in preheated pan until desired color is achieved.

Not a recipe, But My wife has been raving about the corn meal she got from Mount Hope. She bought more to share with her friends. I do like the corn bread she makes.

every bag of cornmeal I have seen and used for decades has the instruction right on the bag.
450 deg ,greased iron pan [I use Crisco],two eggs 1/4 cup oil[Corn oil]
1/1/4 cup of butter milk.
Takes about 18 min on top oven rack

I've been buying Cornbread from my local Sprouts Grocery. IF you live near a Sprouts, give it a try. This is already baked and ready to eat.

They have 2 kinds, regular and jalapeno.

The jalapeno corn bread also has some cheese in it, and it is not too hot a heat. Very delicious.

I'm fully capable and experienced in making cornbread, and I even have a dedicated cast iron pun for cornbread only, but dang it I've gotten hooked on this stuff.

Ha, maybe it's cornbread crack, snort.

Had to use Krustys mix last night, out of Weisenberger, so had to order that today, another SF wallet dipping thread...

Still heated up the cast iron to 450, poured in the mix, 20 minutes later ba-boom, corn bread and Chili...

Nice cookie like crust on the bottom....

I love cornbread. I had been using some recipes I got from a Lodge cookbook and they are good. Recently I tried some of the Famous Dave’s mix and it’s awesome. Add water, egg, and milk (I use buttermilk) to the box and it pours perfectly in a 9” cast iron pan. Sometimes I toss some jalapeños and cheddar in it.

This is the other cornbread mix I use. Basic water/egg/buttermilk mix in a smaller 8” cast iron pan makes a great breakfast snack for a few days. I like to use bacon grease with this one. Some in the pan while heating and some in the mix. Delicious.

I found this stuff a year or two ago, and it is my go-to cornbread mix......I can't make it better than this. I always add either hot green chilies or jalapenos to the mix.
