Just got home from picking up 6 Cornish Game Hens. I am thawing them in the fridge, and on new Year's Day(morning), I will apply my seasoning, and into the smoker they go. For poultry, I use Alder wood as it isn't such a strong smoke as hickory or mesquite. they will smoke @225F for a few hours, and then rest them before having one for supper. Likely will have dressing and gravy, and Brussels Sprouts with them. Lemon pie for dessert.
The other 5 "baby chickens" will be individually vacuum sealed and put in the freezer for later.

Made this last night, went well with a salad, a bit lighter than the Christmas night meal.
Making this tonight over egg noodles. There's some faster, less complicated versions but, the cognac is a nice touch.
