If you want to recreate the queso dip that you get at most Mexican restaurants in the US, use white American cheese and cream or milk. Add canned green chilis to taste. Simple and tasty.

At work we get a brick of cheese around Christmas from I don't know where for many years. Turns out it was from a vendor we use. One year I picked it up and took it home. Holy crap on a cracker this is some of the best cheddar cheese I've ever had. Its from the Mississippi State University. This stuff is really good.

My daughters inlaws make a super dip with cream cheese, sausage, mild Mexican salsa.
Cream cheese is good with most everything.
Mix strawberry jam and cream cheese about 50/50....

Between Asiago, blue cheese & the various cheddars found throughout the world, some need to expand their horizons. Not to mention a fine Pinot Noir & cheese pairing like Brie, Epoisses or a Gouda or Gruyere. Simply outstanding..

Going to have to expand my horizons and try these various types of cheese. I’m more than happy with a jar of Cheez Whiz, saltines, and a bottle of Tabasco.

The deli counter at the Walmart Neighborhood grocery store near me carries the President brand (from France) of Emmental cheese. A really great flavored "Swiss" type.

When I'm in the store I usually have them slice a half pound or so that I use for sandwiches on rye bread, or as a snack on those Town House pretzel crackers.

Fresh Mozzarella sliced, sliced tomatoes, balsamic glaze for me and fresh Basil



I do my best to eat fairly healthy, but cheese is my weakness

Sure, and sounds good. I also like a mild cheddar for burgers (because it melts better than an aged cheddar), and also a mild to medium aged swiss. Also delicious on a burger is blue cheese. The snap and tang of blue cheese against the fatty richness of ground beef is dynamite.

Ok ok ok... Smoked Gouda, and the Parm, itsa good.

They have plenty of selections of cheese, Dubliner, French Brie, among others...

You can even order a Whole Wheel Parmigiano Reggiano, 72 lbs. for just under a Grand...
