Check out the list of ingredients in the sandwich as a whole - the cholesterol is in the eggs and dairy of the bun, cheese and fried egg:

Sesame ciabatta bun [enriched wheat flour (flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), water, sesame seeds, eggs, durum wheat semolina, sugar, sunflower oil, butter (milk), salt, paprika, malted barley flour, yeast, cultured wheat starch, microbial enzymes (amylase)]

Fried egg patty [egg whites, egg yolks, milk, food starch- modified, salt, citric acid]

Plant-based breakfast patty [water, soy protein concentrate, sunflower oil, coconut oil, contains 2% or less of: citric acid, cultured dextrose, food starch – modified, garlic powder, methylcellulose, mixed tocopherols (vitamin e), natural flavors, niacin (vitamin b3), onion powder, pyridoxine hydrochloride (vitamin b6), riboflavin (vitamin b2), salt, sodium ascorbate (vitamin c), soy leghemoglobin, soy protein isolate, spices, vitamin b12, yeast extract, zinc gluconate]

Sharp cheddar cheese [pasteurized milk, cheese culture, salt, enzymes, annatto (for color)]

Of course, one never knows what, exactly, is in "natural flavors".

It's got 23% more cholesterol than their Bacon, Gouda & Egg Sandwich.

I guess that's why it's called an Impossible Sandwich.

From the Starbuck's menu:

Impossible™ Breakfast Sandwich
Calories: 420
Saturated Fat: 8 grams
Cholesterol: 190 mg
Sodium: 800 mg

Bacon, Gouda & Egg Sandwich
Calories: 360
Saturated Fat: 7 grams
Cholesterol: 155 mg
Sodium: 720 mg

Turkey Bacon, Cheddar & Egg White Sandwich (what I usually get)
Calories: 230
Saturated Fat: 2.5 grams
Cholesterol: 20 mg
Sodium: 560 mg

It isn't even close.

I’m in the same boat with heart issues since 1990 and a bypass in ‘98. I’ll admit to soy burgers at times, the low or no fat ones as I’m supposed to restrict red meat.

When the Impossible Burgers were introduced I looked at the total fat content and was surprised how High it was for a supposed healthier alternative.

I came across a news segment how the military is adding a budget item to introduce fake meat into what they feed the military.

"It did not really matter what we expected from life, but rather what life expected from us. We needed to stop asking about the meaning of life, and instead to think of ourselves as those who were being questioned by life – daily and hourly. Our answer must consist not in talk and meditation, but in right action and in right conduct. Life ultimately means taking the responsibility to find the right answer to its problems and to fulfill the tasks which it constantly sets for each individual." Viktor Frankl, Man's Search for Meaning, 1946.
