Good brands for commercial gas range?
The rifle club where I shoot is redoing the kitchen. We are looking at all stainless appliances, tables, etc.

What brands do you recommend for a range/oven that will be 36-48” wide?

Any brands to avoid?

Wolf is one of the best you can buy, you can also check out NXR, they make a nice range at a decent price. Their burners are actually outdated Wolf burners

I've owned Viking and Wolf. I prefer Wolf. Great cooktop, will buy again for my next house.

Wolf makes a fantatic appliance. Make sure there is factory approved service nearby. Nothing worse than an expensive piece of equipment being serviced by a rummy.

Find a used restaurant equipment store. They will have good deals on commercial units. Just remember these will not have the insulation built in as home units do

I had a 4-burner Garland I used for two seasons. Nice burner controls. But after working on both a no-name and a Vulcan, I came to understand lots of the parts are standard. Its like Bradford white does not make their own gas valve and thermostatic control, they use Honeywell.

The Garland is a little lighter-duty than the Vulcan, I think. It was traded to a friend for money owed, and sits in his garage, unused.

That said, maybe a good comparison is like when you got a present as a kid. A heavier box meant something good inside. I remember getting an all-metal airplane with folding wings from my grandparents; knew it was "good" before ripping the paper off the box

Currently a Vulcan 10-burner 2-oven unit is still limping along at a clients. One of the oven doors refuses to install, and several non-commercial appliance specialists have tried to fix it. I think someone jumped up and down on the open oven door and bent the frame of the door. Aside from benefitting from new range pilot tubes and orifices, the thing is a tank. Of her three units, I've replaced two thermocouples and one BASO safety valve on the Vulcans, and am impressed with the build quality.

Units on casters or which you want to move regularly for cleaning will want the Dormont (blue) gas hose with quick disconnect or equivalent.

This. Lots of failures in the restaurant business so lots of good used equipment.
