I had a 7-hour purchase once. Won’t ever visit that dealer again.
I’m of the opinion that if the dealership can’t get the paperwork done in 45 minutes or less, then I really don’t want to buy there. As automated as the system is, there’s no real reason for it to take longer than that.
That’s just my opinion, though, and based on my last four purchases — all wrapped up pretty quickly. To be fair, my last one took about an hour, simply due to trouble getting in touch with my insurance agent promptly.

On a side note, I tried looking for a console vault for the Outback. I only found one company making a vault for a 2014. It’s so small that it’s does not justify the price. I really wish I could find something better than a box cable tied to a seat. It’s a decent solution but certainly not ideal. Why on earth car manufacturers are not taking advantage of this market is beyond me. Even those who don’t carry have occasions where something valuable needs to be protected from smash and grabs.
I’ll take any suggestions as to helpful gadgets for it. I always get Weather-Tek floor mats for my vehicles. Is there anything else you have found useful?

If I had an OB, maybe a roof box. My dad scored a large Yakima box for $100 in my neighborhood. Perfect fit on their Onyx OB.
