My 2nd Attempt At Cornbread
We had a chili and cornbread competition at work, so I decided to try my hand at it. Did a test run Tuesday but it was a little overdone and not flavorful enough.

This one has Jalapeno pimento cheese, habanero and chipotle cheese, honey, homemade bacon crumbles inside and candied bacon on top. I hope I win but this thing is amazing!

Looks great! I've played around with work and Church chili comps before. I usually do pretty well, 1st or 2nd. One danger is making something objectively really good, but subjectively the average person's palette doesn't agree with it. Too spicy etc.

90% of the chili entries are just bland home made versions of canned chili made with beans, ground beef and chili powder.

Same for corn-bread, typically not much imagination going on like yours.

I'm all for adding cheese and jalepenos when making messican cornbread. Whether regular or mex, neither gets anything sweet put in, as sweet cornbread is not, IMHO, real cornbread.

Yours does look good, and would qualify in every way as edible, being that you made up somewhat for the honey by adding bacon. Go, and sin no more.

I'd try it; it looks good and the mix sounds interesting, but I think that cornbread should be simpler without all the fancy ingredients. Use fresh corn and bacon grease in the skillet. Too much fanciness can distract from the corn flavor.

It turned out really good. I ended up getting 2nd place. I lucked up on the participation raffle and got an 8 qt. Instant-Pot! I am going to keep playing around with it, but the flavor was on point. Corn was the main flavor, but it had a creaminess from the cheese and slight heat from the peppers. The candied bacon is always good.
