Slice it into about 1/2" steaks, soak in buttermilk overnight. Rinse. Batter it and deep fry.

That's basically what I did.
Marinated in a little olive oil and balsamic vinegar for about 15-20 minutes, seasoned with garlic, pepper, thyme, rosemary and a little salt and cooked quick. About 1.5 minutes/side.
They were delicious!

2000Z-71Marinade for 24 hours
1/2 cup burbon
1/2 cup soy sauce
1/2 cup Worcestershire sauce
3 tbsp sugar
1 tbsp ginger
1 tbsp garlic
and a lot of orange peel and peppercorn
Grill and enjoy.
