Who Has A Good Recipe For Caesar Dressing? Login/Join

I need one before the end of the week.

I don't really like overwhelming vinegar flavor (if I can taste it, it's overwhelming!), so I’m looking for a recipe that emphasizes lemon juice rather than vinegar.

How about the egg yolks? Is there a real risk when using raw yolks?

I have done a bit of internet searching. So far, this one is the best that I have come up with. Haven't tried it yet.

Any comments? Does anyone have a better recipe for me?

If you're worried about the raw egg yolks, you should be able to buy in-shell pasteurized eggs at the grocery store.

With unpasteurized eggs, you can minimize the risk by making sure there aren't any cracks in the shell and by rinsing the eggs before you break them, but there's still some risk. Of course, salmonella is also a risk for fried eggs with runny yolks, and most people don't think twice about that.

I love Caesar dressing but I don't usually make it and don't have go-to recipe. The one you posted sure looks good, though. It looks like it would make exactly the kind of Caesar dressing I like.

V-tail I make mine almost exactly the same as that recipe. It is fantastic.

Maybe make some tonight so you can tweak the recipe? But that one comes out very nice and lemony. I've been doing it for years and have never had an issue with the raw egg yolks.

I'm not sure. My wife said something this morning about baking something, then she rushed off to work.

If it were up to me, dessert would be some fresh fruit, various cheeses, and some port and / or sherry, and some good coffee. I think I'm going to be overruled on that one.

That's my preference too. Add some dark choco / fudge to complement the port and I'm all in. Soft fudge / dark choco truffle and port is yummy to me.

That is a good recipe. Try to get really good, mild anchovies... rinse in cool water and dry before using. Yummy!!

This is my home made Caesar salad dressing recipe. I make it often, and its delicious. Enough for a husband/wife table salad. Adjust as necessary.

-one garlic clove and 1/8 teaspoon salt, smashed into a fine paste
-1.5 ounces mayonnaise
-1 tablespoon grated Parmesan
-1/4 teaspoon anchovy paste
-juice of one fresh squeezed lemon (or less, to taste)
- salt and pepper to taste

1 tablespoon anchovie paste
1 tablespoon minced garlic
1 tablespoon dijon mustard
1 teaspoon Coleman's mustard powder
3 tablespoons Worcestershire Sauce
1/2 cup olive oil
1 raw egg
1 table spoon balsamic vinegar
1 teaspoon lemon juice
Parmesan cheese

Mix all but the Parmesan cheese together. I put the cheese on right before serving.

I’m a big advocate of making things fresh from scratch in the kitchen. That being said... I have not found a better Caesar dressing than Cardini’s Caesar Dressing from the grocery store. It’s made using the original recipe from the guy who claims to have invented the Caesar salad. It’s really good.
