Another vote for I would like the recipe! I make a pretty good Mexican meatloaf but would love to try another.

I don't really use a recipe.

For every pound of beef I put all these in a food processor:
1 cut up red, orange or yellow bell pepper
1 egg
A fistful of Italian seasoning
A couple of squirts of bbq sauce
A goodly amount of A1 sauce
A heaping table spoon of minced garlic

Liquify

Pour it into a bowl with meat and knead until mixed while adding bread crumbs until the loaf is firm.

Get a pan that is deep enough for the loaf. I make the loaf flat and then form it to fit the pan.

Coat top of loaf with bbq sauce. I make the top concave to hold the sauce on top.

Pour a little water the pan, enough to cover the bottom.

350° for 1/2 hour uncovered then cover with foil and bake for another hour.

I guess I now have a recipe. Razz

My wife makes hers with salsa instead of canned tomatoes mixed into the meat. Makes it good and juicy and a little spicy too.




Here's to the sunny slopes of long ago.
