GARLIC BUTTER SHRIMP PASTA INGREDIENTS: 8 ounces fettuccine 1 pound medium shrimp, peeled and deveined Kosher salt and freshly ground black pepper, to taste 8 tablespoons (1 stick) unsalted butter, divided 4 cloves garlic, minced 1/2 teaspoon dried oregano 1/2 teaspoon crushed red pepper flakes 2 cups baby arugula 1/4 cup freshly grated Parmesan 2 tablespoons chopped fresh parsley leaves DIRECTIONS: In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Season shrimp with salt and pepper, to taste; set aside. Melt 2 tablespoons butter in a large skillet over medium high heat. Add garlic, oregano and red pepper flakes, and cook, stirring frequently, until fragrant, about 1-2 minutes. Add shrimp and cook, stirring occasionally, until pink, about 2-3 minutes; set aside. Melt remaining 6 tablespoons butter in the skillet. Stir in pasta, arugula and Parmesan until arugula begins to wilt, about 2 minutes. Stir in shrimp. Serve immediately, garnished with parsley, if desired. Garlic Butter Shrimp Pasta I make it with Angel Hair (quicker and easier to cook) and broccoli or spinach instead of the arugula. I see what you did there... My favorite pasta dish can't be bought. It was family tradition back when I was a kid and when grandpa was alive that Thanksgiving dinner was cheese ravioli...grandpa made it from scratch. He then took the leftover dough and made these thick, chewy blobs of pasta, cooked to a PERFECT al dente chewy goodness. We called them chew-chews. The sauce (not gravy) was awesome, as well as the meatballs and sausage. Grandpa and Grandma are gone and we'll never have that again. It’s been years ago, the family would go to a small Italian bar/restaurant near Chicago Circle campus. The simplest thing, shells with broccoli was just crazy good. Shells, broccoli, oil, garlic, a bit of parmigiana. My stomach doesn't do well on tomato sauces or strong garlic. I often make Pasta da nada (Loosely translated: "pasta with nothing") Cook pasta al dente in boiling water. Drain. Add a little butter. | |||
