Comfort foods, what are your go to meals that always put a smile on your face?
Cheap Banquet frozen pot pies. I've loved them since I was a child.

Homemade refried beans and handmade flour tortillas. A couple summers I stayed with my grandma and she would be up early cooking breakfast by hand. That was the greatest smell in the world.

Chorizo and eggs is another favorite but I can live off bean tacos with some bacon thrown in.

In the summertime my favorite is a BLT with honey mustard. I cant stand mayo.
Otherwise just a T-bone, baked potato, and sliced carrots cooked in butter. Nothing fancy.

Several of the "signature" dishes I have been known to make from time-to-time:

Beef Stroganoff - when made with a good cut of beef, NOT that hamburger-based abomination, and served over shoestring fries

"Texas Red" chili - again, good beef, lots of fresh and dried chiles. Hot as blazes! My "secret" is including about a dozen green Habaneros. Served over Basmati rice, topped with shredded cheese and sour cream.

Green chile enchiladas - I usually get 25 lbs. of Hatch Big Jims every year just for this, shredded chicken and cheese, rolled, not stacked. Good with eggs too.

The first BLT of the year, tomato fresh from the garden still warm from the sun, thick-sliced bacon, sourdough bread. I usually get my first acceptable slicing tomato about July 4th each year, this year maybe a week early.

It's a toss up for favorite. Stuffed cabbage slathered in sour cream or pierogis smothered in mushroom gravy.

But eggs, breakfast salsa, refried beans and fresh corn tortillas…

Probably my mom’s Swiss steak, or meat loaf, but I haven’t had either in many years.

Salt cured cod fish, rehydrated for 3 days swapping the water twice a day. Pat it in some flour and fry it in a skillet full of oil.

I don't care what is going on in life, 6 or 7 peices of that Baccala will cure any issues. Especially if paired with some lettuce chopped up with salt and lemon drizzled over it.

So simple but soo good.
