Comfort foods, what are your go to meals that always put a smile on your face?
One other comfort food for me..

Baked beans with 'lil smokies.

Two large cans of Bushs's best Original beans.
half pound of brown sugar (can use up to a pound for a sweeter flavor)
one 16oz bittle of bbq sauce
2lb of cocktail wienies (chopped into small pieces)
One large red onion chopped up
A little bit of cayenne pepper (maybe 1/4 teaspoon), a little goes a LONG way in beans.
Teaspoon of chili powder


Throw it all into a lasagna pan in the oven at 350, cook for about 4 hours in total, stirring it every half hour.

It started out as a side dish for parties, but with the ingredients in it for me it makes a great meal all by itself.

Growing up in Buffalo, a stinger sub- basically everything on a Philly cheese steak sub - steak cheese peppers and onions on half the roll
Then on the other half a traditional chicken finger sub- chicken tenders breaded with hot sauce, provolone cheese lettuce and tomato and doused with blue cheese dressing. Then the two halves get smashed together into the ultimate sub sandwich

Nor have I ever been to Europe…


That said, my favorite snack is escargots!

Recipe for sauce for dozen large escargots - I use Roland Extra Large:

1/4 stick unsalted butter
3 cloves fresh garlic, coarse chopped
Two and one half tablespoons dry imported sherry
Two quarters of fresh lemon wedges on side (Heat whole lemon in microwave on high for 15-20 seconds before quartering)

Melt butter over low heat; very lightly sauté garlic until highly aromatic
Add sherry and let alcohol evaporate
Add escargots to sauce for about two minutes
Serve in bowl with fresh torn baguettes, lemon on the side added to taste.

I don’t know about a smile, but they make me feel safe/better.

Unfortunately, pretty much anything sweet.

I say "unfortunately" because unless I watch my weight VERY carefully, I slip into the pre-diabetic zone and I am NOT going to deal with that if I have any say in the matter.




Be careful when following the masses. Sometimes the M is silent.

If I'm by the beach it's clam chowder and a blackened mahi sandwich. Somewhere cold it's tomato soup and a grilled cheese sandwich. Lasagna is also always a favorite. And lastly a corned beef and chopped liver on rye.

My mom grew up poor in a coal mining camp in Harlan Kentucky and was the oldest of 10 kids. As such, she did a lot of cooking and learned how to feed many mouths with little in the way of store-bought food.

I still find comfort in meals of cornbread with beans and ham hocks, chicken and dumplings, meatloaf, fried egg/Kentucky round steak sandwiches and mash potatoes with beef-tip gravy.

A couple of my favorite comfort foods.

Mom's meatloaf recipe. She didn't invent it, and the place she found it titled it "39 ways to make meatloaf" so high likelihood I have the ingredients to make it. I prefer quaker oats as the filler but Mom used to use bread crumbs. I also smoke mine on the BGE and make 6 mini loafs instead of 1 big loaf as every mini loaf has more crust than even a corner piece.

Another favorite is called Peasant Soup and it's a copycat recipe of a place my Mom and I used to eat at when I was teen and in my twenties. It's the Greek version of vegetable beef and barley soup (i.e. it has lamb instead of beef and uses Greek spices) and it's very hearty.
