PSA Improve Thanksgiving Turkey & Thermoworks Sale
The highly regarded Thermoworks has a 35% to 50% off sale in time to arrive before Thanksgiving (TG)

Buy a quality, accurate thermometer and cook to temperature not to time. Here are a few:
  • Instant read - I highly recommend Thermapen One. It's extremely fast (under 1 second), extremely accurate (0.5 deg F), and extremely rugged. I got 12 years out of my Thermapen classic and just upgraded to this. Sure beats buying Amazon's best reviewed $20 instant read digital thermometer and replacing every 7 months. The higher end Thermopen One is on sale right now for less than the classic.
  • Leave in - I use the Thermoworks Smoke for both my BGE and my oven. It has a wireless transmitter with a long range and I can check temps or receive temp alarms across the street. I recently replaced mine (leaky battery ruined it after 4 years) at full price so I missed out on this half off sale ($49.50).
  • Bargain Instant Read - Thermoworks ThermoPop 2 is $35. It's a 3 to 4 second read and plus/minus 2 deg F.
  • Bargain Leave In - ThermaPen DOT is 45% off at $24.75. 4' high temp probe cable. Pure simplicity with 2 displays - current temp and alarm temp.

I'm using my cookbook from 25 years ago and don't care if several years ago USDA research lead to a revised 165 deg safe cooking temperature for turkey.
That is a paraphrase, and I was a guest so I tried to share the new information in a polite manner when the turkey was at 165 and dinner was on time. Dinner was an hour late and the entire hour was spent making bone dry 180 degree internal temp turkey.

I don't own a thermometer and trust the pop-up thermometer in the turkey
The free pop-up thermometer is notoriously inaccurate and often results in dry turkey. Think of it as a device that says it's safe to eat, but doesn't give a shit if it tastes like 30 year old shoe leather.

The USDA is responsible for ruining many many meals with their ridiculous "standards". There's no need whatsoever to cook a bird to those temperatures...unless you want a gross hunk of dry meat.

Safely cooking meat is a function of temperature and time. Any pathogenic bacteria will die instantly at 165F, but they'll also die with just a few minutes at 150F and you'll have a nice tasty and juicy piece of meat.

    This article explains it well.

  • I have a Mk4 Thermapen but I use the Thermopop(1) more often because, I don't know why. I don't want to drop the expensive one?
I got several Thermopop 1st gens on sale and gave as gifts.
One of my friends makes yogurt at home and would leave the thermopop in the low temp oven often. It bit him and the heat damaged it.
He bought a new brand on Amazon to take the Thermopop's place and discovered the difference between Thermoworks and what you can get cheap on Amazon.

We've had an older Thermapen (the model before the One?) for many years, works awesome and very durable. Cooking to temp has been a true gamechanger when it comes to serving great tasting food.

Have had one of their "instant reads" for about 10 years. It has paid for itself time and again in perfectly cooked (correct temperature/doneness) steaks alone.
    Great product.

I love my thermapen. I’m looking at the leave in one next.

I had a Thermapen One die on me in less than a year. Changed battery, checked connections...dead. Maybe I got an outlier...might try again.

I was going to post the same suggestion. In my experience Thermoworks customer service is excellent.

I have several Thermapens (including the newest Thermapen One) and they are indispensable for cooking steaks and roasts.

I also use their Smoke X, and I'm waiting for my pre-ordered RFX Wireless System to be delivered.

    Great company. Great products.
