Looks like both are correct but queueing is less common outside the math/CS topic, which is usually referred to in the literature as "queueing theory" rather than "queuing theory."

I work in Tech and use the words queue, queued, and queueing almost every day, if not every day — spelled that way.

I have never used the term other than in its relation to queueing theory. I don't care what other people do, since the folks I associate with use the spelling I learned.
