The venerable potato: how do you like to spud?
Diced up with onions and fried in bacon grease in a black iron skillet...served with either bacon or fried ham along with a three or four egg omelet made with Publix butterkase cheese...toast with real butter...YUM-YUM-Yum!!! Big Grin

I discovered this recipe awhile back and they are very tasty. I cut mine up a little smaller than as recommended in the recipe. It's always a big hit.

We take decent size potatoes and slice them into 4 thick pieces. After that, put a dab of butter and a thick slice of onion between each of the slices, generously salt and pepper them, then jam the potatoes back together with the butter and onions in between the slices and double-wrap them in foil to hold them together like a whole potato. We normally roast them around the edge of a charcoal fire on a Weber kettle while whatever meat we have going is cooking. We turn them occasionally and take them off whenever they're soft enough to squeeze. When lazy, we'll just throw them on the gas grill.

Same with me. Love potatoes of all sorts. But if I had to choose one, my Scalloped Potatoes would be the winner (has bacon bits in it Smile). Reason is that is so damn good, but also it is one dish I can eat by itself, a meal all on its own.

I like coarsely mashed yukons with lots of butter. I like lumps.

And nothing wrong with a plain old baked potato. I like them done on the grill, rubbed with oil and coarse salt and grilled until the skin is crispy

Also love Garlic Butter Parmesan Smashed Potatoes. Once you understand the smashing/roasting technique you can use any toppings that you like.

we do this but instead of boil we nuke them till almost done, sprinkle with salt, pepper, parsley olive oil, then roast,

another favorite is a Jamie Oliver recipe, that we modify slightly,


steam or nuke small or cut potatoes until almost done,
set aside

cook some Chorizo (or any sausage) in a skillet with some onions

when nearly done, add the potatoes,
fry just a bit longer,

add some rosemary,

add about 6-8 eggs, (depending on the size of your fry pan) and toss in a hot oven, on broil,

once the eggs have risen, and browned a bit, pull and add some parsley and lemon juice (just a bit of juice)

eat,

can't remember what he called it but it is mighty tasty

Ok, any potato will do as long as it involves salt, butter, and cheese; any or all. I fried some hashbrowns in bacon grease today with a little seasoning salt and jalapeños. Went great with the eggs...mmmmm....

We prepare spuds in many, many ways. An example was last nights rendition. Creamed potatoes and freshly picked peas out of the garden. I could have made a meal out of them, they were so good.
