Hen of the Woods mushrooms sautéed in butter
I sautéed some “Hen of the Woods” mushrooms, AKA Maitake mushrooms (Japanese name). They’re native to China, Japan, and the US. Very tasty when sautéed in garlic butter.

Cutting them into smaller pieces:



Now in my frying pan:



Now cooked:



After cooking, I seasoned them with freshly ground black pepper, seasoning salt, cumin, and Marmite. (Marmite is to savory as sugar is to sweet.) Danged good, they were.

I'm not sure there's really any way to describe the flavor. It's salty and umami, so it's kind of in the same flavor family as stuff like anchovy paste, miso, and soy sauce (and to a lesser extent, tomato paste, which is salty and umami but also fairly sweet).

It's pretty polarizing, at least served on toast as is traditional, to the point that they use "love it or hate it" as an official marketing slogan.

I think adding a bit to a dish (the way Pipe Smoker did here) could give a nice flavor boost that even people who don't like Marmite by itself would enjoy. Anchovy paste is often used that way, by itself it has a very strong flavor that a lot of people don't like, but a little bit added to a dish just adds some "body" or "richness" to the overall flavor (because of the umami) and nothing objectionable comes through.

Looks killer, I haven't tried that kind or Marmite.

Found some Morels on my property and it changed my life. Just put em in the slow cooker with my chicken. Dam were they good. Blew my mind and I haven't looked at mushrooms the same since. That one looks delicious, like a brother to shitake or something.

We hunt for Chicken in the fall, clean then and cut into strips and freeze. They are great on their own or to add to things like soup or stew.
