What did you make for dinner?
Chicken noodle soup. Haven't made any for awhile, but today was cold and overcast and it just seemed right.

This isn’t going to impress anyone, but a bowl of Amy’s split pea soup with diced Hickory Smoke Spam was damned good. Seasoned with freshly ground black pepper and Cholula Green Pepper hot sauce.

Chicken vegetable soup, from scratch. It was good, and there is another meal's worth.

Buta bara no kakuni - Japanese style pork belly braised in a sweet soy sauce based sauce / glaze.

The pork belly is rendered down while slowly simmered in the sweet soy sauce based broth / liquid until it's just a glaze / syrup.

Instead of simmering for 2-3 hours, I used a pressure cooker to first cook the pork belly and it came out too soft. It came out okay and tasted great but I'll reduce the cooking time to keep some texture.

No pics, sorry. It doesn't look like anything special. (and I forgot). But it's pork belly. Of course it tasted awesome. Smile

Some slices of that in ramen or over fresh, white rice......

Leftover BBQ hot pocket. Pulled pork and beef, ricotta cheese, BBQ sauce cheddar cheese blend, pickled red onions and a dry rub seasoning.

That meat loaf looks outstanding Skins it's been one of my favorites since I was a kid. My mom made it with a tomato relish that she mixed in with the meat and poured some more over the top just before it was done.

London broil from local (friend-raised) beef, broccoli and some other vegetables, and some Irish cream-flavored ice cream for dessert.

Decided to play a bit with spaghetti aglio e olio.

Used EVOO and butter to sauté the garlic and then added diced onion and bell peppers. Used a splash of milk and a couple spoonful's of sour cream along with a good amount of freshly grated parmigiano reggiano for a sauce.

Dish had a rich flavor with the peppers and onions retaining a bit of nice crunch. I think this would have been really nice with some shrimp. Big Grin

Something on the side...

Boudin Stuffed Jalapenos
Makes 8 boudin stuffed jalapenos
4 large jalapenos, cut in half lengthwise
1 link of boudin
8 slices of bacon

Pre-heat oven to 350 degF

Cut the jalapenos in half, spoon out the seeds and rinse.
Take the casing off of the boudin, stuff the jalapenos. (I have found where one link of boudin will stuff 8 jalapeno halves.)
Wrap the jalapenos with bacon.
Place on a foil lined cookie sheet, put it in the pre-heated oven for 30 - 35 minutes.

Dealing with insomnia here at oh-dark-thirty I started searching about the use of rice (I have some leftover basmati) in breakfast dishes. Found this which I will try a variation of in a few hours:

Intend to use rice, crisp bacon, eggs (haven't decided if I want to use hard boiled from the fridge or poach up some), tagarashi seasoning, grape tomatoes, soy and/or oyster sauce.

Later today I'll start corned beef and cabbage for dinner. Big Grin

Donburi is said to be suitable for breakfast, lunch, or dinner too.

Stomach started rumbling sooner than expected so I pressed on for an early breakfast. Smile

No, not traditional but I quite enjoyed it.
I opted to poach some eggs and used a small amount of both soy and oyster sauces. The togarashi seasoning is spicier than furikake and gave the dish a nice subtle kick. I forgot about the tomatoes but didn't miss them.
