God I love homegrown tomatoes! I am only growing Okra right now and planted late so I am just starting to get some but not enough to do anything with. I didn’t know you could eat them raw so right now I have and not bad.

I was off today and my wife came home from a week long trip so I made spaghetti and meatballs since she loves mine. I think tomorrow will be meatball subs!

We made cauliflower “steaks” as a veggie side dish.

Sliced the fruit vertically in 3/8 inch pieces; sautéed in butter and olive oil with salt and pepper… put on baking sheet, topped with grated parmigiana reggiano and broiled!

Total hit with everyone!

Since I did spaghetti and meatballs yesterday, today was a meatball sub.

Toasted a hoagie roll with butter and garlic and then added sautéed onions.



Add the meatballs:





Fresh mozzarella cheese!




Ready to devour and so good!!! Yes, this required a fork and knife to eat…LOL.

Sorry I don’t have pics to share… this was a chicken-smoking weekend.

I smoked a half-dozen chicken breasts with garlic-lime seasoning and some shrimp yesterday for a family dinner, then smoked a beer-can chicken today.

Yellow squash and zucchini in cast iron (with garlic, butter, and black pepper).

Store-bought key lime pie for dessert both days.

We’ve eaten well this weekend. Smile

Nabbed a Tri-Tip from Costco this weekend.
I normally would grill it on the BGE but it's so damn hot outside I didn't want to tend it in the heat so I sous vide it. Then seared it in beef tallow and topped with chimichurri and compound butter.

PS. I only cut with the grain on the center because the grain changes but all other cuts against the grain. Smile

Perfectly done. Very nice. You should try my pepper cream sauce on that.

1T peppercorns
1 cup heavy cream
1/2 cup beef stock
2 small shallots minced
2 cloves garlic minced
2T butter
1t Worcestershire sauce
Salt to taste

Melt butter and fry shallots until fragrant. Crush peppercorns and add them and garlic. Fry until garlic is fragrant and just barely beginning to brown (don't let it burn). Add stock and Worcestershire. Stir in the cream, and add salt to taste. Simmer and reduce to desired thickness.

It really pairs well with TriTip.
