GustoferWhat did you make for dinner?
Focaccia - to be paired with spaghetti and meatballs later. Or, maybe I'll just eat these for dinner.
Gorgonzola/onion, tomato/mozerella, mozerella/pesto, and mozerella/tomato/basil. And, no bugs in the flour, so I've got that going for me...which is nice.

Looks delicious! I just did spaghetti and homemade meatballs. I didn’t post pictures since I have before. I have had it twice and meatball sandwiches twice in the last week.

I will certainly try frying the fries in beef tallow. I have never used it before so I even have to look into buying it. I always have tried to make fries at home with fresh sweet or russet potatoes and thought they were good but I either just baked them or did a one time fry. Now learning to briefly boil in water, dry, briefly fry in oil, dry, and then do a final third fry has been a total game changer.

GustoferRemember how good McDonalds fries used to be? Better than everyone else's? Then they started to taste like crap...like everyone else's? They switched from beef tallow to vegetable oil.

irreverentHold on. You cut up a ribeye?? For a sandwich? Don’t get me wrong, the sandwich looks fantastic, but aren’t there more cost effective cuts that taste pretty good? I really don’t know better because I haven’t made a cheesesteak sandwich.

About once a year I get a whole rib eye loin, when I find a sale, and cut my own steaks, vac seal, and freeze. I think the last one I got for ~$10lb.

Gustofer Chef John's Creamy Bay Scallops.. One of my favorite recipes. I use bucatini pasta to really sop up the amazing sauce.

bun - Killer Dave's (thanks Sigforum for the Killer' Dave's recommendation last year).
eggs - pasture raised
ham - came from a pig that never had antibiotics or growth hormone, and was never fed by-products
baby swiss - the premium slices
