What did you make for dinner?
Pulled pork in the Instant pot. I was going to smoke it, but the rain and flooding of Biblical proportions.

It wasn't as good as if it was smoked low and slow. But it was fairly good.

Rubbed the pork shoulder, browned and then deglazed the Instant pot with 2 cups of chicken broth.

Added the pork back, added 1 teaspoon of ACV, 2 teaspoons of liquid smoke, on high pressure cook 1 hour and 15 minutes. Natural release for 25 minutes. Pulled out and put into a bowl and shred with forks, added a little more rub and some BBQ sauce.

On some bread with cheese, BBQ sauce and dill pickle.

Looks good Otto! I love sautéed cabbage. I gotta get back to cooking basics like I used to. A meat and vegetables. Plus I need to start working out. Just bought a rower so we shall see.

Vegetable Moose Soup.

Our family recipe veggie soup using cubed moose roast in place of stew meat as we were out.

I'm going to have to hit up my Grandson for more moose meat, everything I've made with it has been delicious!

Black Cod ("Butterfish"). Simply baked with breadcrumbs and lemon juice on top.
The bones are a bit of a nuisance, but the fish is delicious.

It's like butter, basted in butter, with butter on the side. If it weren't for walleye it'd be the best fish there is. It's kind of a toss up for me.

We have a fresh (frozen) fish guy come through town every few weeks. He has family in Sitka that flash freezes their catch and ships it down where he sells it. I keep well stocked in Kings and halibut from him, and every so often I'll get a slab of black cod. Mmmmmm.....

My brothers and I went on a fishing trip to Sitka a few years back and I caught one of them. I'd never had it before and was expecting it to be just...cod. Nope. Not even close.

My Friday meal was nothing too exciting. Shrimp scampi pizza.

So today was all homemade ground beef tacos and authentic Mexican rice.

I have posted the tacos before and make them the way my wife’s mom made them. Then last time I made an authentic Mexican Rice recipe and it was good, but something was missing. Today I found another recipe and each were a little different, but I combined the best of both and man did this make the absolute best Mexican Rice I have ever had anywhere! I would put the tacos and the rice up against any restaurant.

I like frying fresh corn tortillas for the taco shell as I can control how they are shaped to hold ingredients and are crispy, but don’t break all into pieces on your first bite. I then first put a layer of freshly grated Muenster cheese, then the hot ground beef to help melt it, then hot sauce, and then fresh made guacamole.

I have to say though that the Mexican rice was freaking amazing and I feel stupid for using packaged Spanish Rice for all my life. Yes, it takes way more time to make but it is worth it. Now I need to write down my recipe since I combined two recipes.
