What did you make for dinner?
I have been craving fried shrimp for two weeks now. I prefer to make it myself as I don’t trust restaurants for freshness or proper deveining, but it is a hassle to do fried stuff so I have been putting it off until tonight. Totally hit the spot and satisfied my craving! I made fresh coleslaw with broccoli, carrots, cabbage, and brussel sprouts and then had left over three bean salad from when I took over BBQ to have lunch with my mom on Saturday.

Peeled and deveined Texas Gulf Shrimp:

Jesse and Rouge, both look great. I really like butter chicken and have a great InstaPot recipe for it. I have made the Gordon Ramsey version, but that takes way too much time.

TatorTodd, if you have a link to your recipe I would love to see it. I don’t want you to have to type it all out. I love chicken tortilla soup and keep trying different recipes, but just can’t seem to find the right one. There was a restaurant near me that had the best I have had, but sadly they closed.

I enjoy this hearty recipe, but it's not a traditional chicken tortilla soup. If you're looking for a traditional tortilla soup, this isn't the recipe for you.

I can't remember which Dallas newspaper awarded this reader submission as Grand Prize Winner. I've used {} to note changes I've made to it.

Yeah, not traditional but that doesn’t mean it isn’t something good. I will try, almost, anything once and see if I like it. I will give it a try one day when I don’t feel like spending hours making a soup since I usually do everything from scratch including making the broth. Thanks!

I was going to ask what it ended up being and if it was good. Looks great!! No better way than to make your own broth for anything! My only thing is I think I see cilantro, and would have used Tai Basil, but that is me just being stupid critical. Looks fantastic!

You and me both, we have some regular basil growing the window that I put in my bowl. My wife, being Latina, puts cilantro on everything. (That was her bowl). She even puts it in spaghetti sauce Frown

Well it is still good. I am married to a Latina as well so I feel you, but I do all the cooking…lol! She goes give her critique though.

We had our nephew and his girlfriend over again tonight. This is starting to become an every other Friday thing. As college students, I think they like my cooking and of course our company. My nephew asked for salmon so I made pan-seared salmon, saffron risotto, garlic broccolini, with strawberry shortcake for desert. Once again, I took a picture as cooking was getting close to done, but failed to take a picture of the plating. They had never had risotto before and couldn’t eat enough.

I enjoy risotto, but man it takes a long time to make properly.

Thanks Jesse! Yeah I had a four burner and hood for over 20 years and my wife wanted it upgraded. I am cheap so I did it myself along with putting in a new dishwasher. Saved a good bit of money and I really love this stovetop! It has a big burner in the middle for boiling big pots. This was the old one:




All ripped out and then replaced gas line.





I also built a shelf at the halfway point in the cabinet below to store things better and it is a game changer. All the cookie sheets and things like that on top and bigger items on the bottom. The shelf isn’t level because apparently they didn’t make the interior squared up when the house was built. Oh well.





New stovetop and hood.

Tonight I made chicken enchiladas with red sauce and Spanish rice. Not in the picture, but also made a fresh pico de gallo. I should have taken my usual progress pictures as that gives a better perspective of the meal. To see this picture alone, you would have no clue what it was or if it seemed any good.




Paired with a great beer my brother-in-law gifted me today.
