What did you make for dinner?
Bone-in beef stew from a 3 lb. chuck roast.

Well, I had Thanksgiving leftovers, but I made potato cakes out of the mashed potatoes.

So smoked turkey, green beans and corn, Hawaiian macaroni salad, turkey gravy, and potato cakes.

As good as Turkey Day!

Camper dinner two nights ago.

Chuckeye steak, rice, and mixed greens with balsamic glaze. Simple but delicious.

I know it's just three days past Thanksgiving, but I've got a turkey breast in the crock pot.

I found a slow cooker Mediterranean roast turkey breast recipe that sounded really good, so...

First attempt at seafood nachos last night (lump crab meat, shrimp, scallops and some lobster tail from lobster tacos the night before... need to find a cheese that will stay gooey:

As motivated by the craving beef thread just had to have some beef (filet from Costco),
Along with a pecan/sweet potato dish and salad with homemade ranch dressing and bacon bits.



Sous Vide @ 132.5 for 2.5 hrs (rosemary/garlic/butter) then pan seared.

If you’re not a velveeta guy, and I don’t blame you if you aren’t, then try a simple cheese sauce.

2 tbs or butter and flour. 1 cup of whole milk or cream. And 2 cups of shredded cheddar +\- a bit for how soupy or thick you want it. Add ingredients in the order listed and just cook it low and slow.

Add pepper flakes or anything else you want to spice it up. Fresh chillies work best if you sautée them or sweat em first.

^^^ If you want to make your cheese thinner as in a dip or queso add some Sodium Citrate .

So I made my Thanksgiving turkey dinner on Saturday for various reasons, so tonight it was time to make soup with the turkey carcass.

Boiling the carcass.



Crazy how much meat you get off a carcass that seems to have no meat left when you boil it.



Then you also have a wonderful turkey stock!



Veggies to be added in.



Seasoning.



Soup cooking.



5 hours later I finally got to enjoy an amazing bowl of turkey soup. I will bring some to my mom tomorrow.
