Tonight was simple. Some meats from Costco, a little cheese and Ritz crackers, and some hot honey. Finishing off the Nate’s hot honey, then moving on to Mike’s.
Ice cold 7.up to go with it all.

xantomI really never considered one until a few years when I built my outdoor cooking area. I should have had one of these a long time ago! We really like ours and you can do so many things on them.
Got home late last night and made Chimichangas with the leftover meat.

StorminNorminOkay, so after Bald1 posted his pictures of Borscht I had to make it. I never had it or ever heard of it, but based on the ingredients it is super healthy and then I read up on the history of it. It turned out really good and I enjoyed it! Took a good amount of time, but was worth it. I added meat and potatoes. I am going to bring some to my mom tomorrow when I visit her to take care of yard chores and we can have it for lunch.
I used American Wagu beef shoulder.
I like to prep all my ingredients. Using the shredding blade on the food processor made doing the beets and carrots so easy and mess free.
Can’t leave out the potatoes!
Sautéed beets and onions and carrots.
Final product!!!!
Served with bread and wine.

Thanks Bob and thanks for turning me on to something new. It is so rare I use a food processor, but when I do that thing is awesome. I think my mom got it at a garage sale long ago. It is probably from the 70’s and built to last!

ARmanChicken â la King.
I haven't had it in years, and I was remembering things my mom would make during fall, and one dish was chicken â la king.
1 cup Sauté chicken with salt, pepper, slap ya momma, Italian seasoning. In half stick butter. Remove chicken
Saute 1 green pepper, small sweet onion, stalk celery add mushrooms and reduce half
Flour to make a rue.
2 cups chicken stock, heavy cream
Add chicken back with accumulated juices and pimientios diced and drained. 1 cup of frozen sweet peas and carrots simmer on low until they are warmed through.
I served over plain white rice, but toasted bread or egg noodles will work, mom would do all 3 ( not at the same time ) for variety.

Dad said his was over done at the requested medium, medium-rare. Truth be told, he just don’t have an appetite. Are two bites and put the rest on the table. Said a pizza sounded good so tomorrow I’ll go get a good take out pizza for him!
He’s down another 8-10 pounds since his last treatment so I gotta do something.

GT-40DOCYou might want to think about adding Ensure, Boost, other brands of drinkable high protein and vitamin drinks to see if your dad will drink them. Just an idea.

A buttered/grilled is even better. Favorite burger place near work flips buns and grills it like a grilled cheese.
I could eat this everyday, but I don't want a cardiologist.
