Christmas Eve has become the more enjoyable part of the Season for me. Four years ago on Christmas my Dad passed away, so I simply make it through Christmas Day for the kids and my wife and any others who happen to be around. So now, we have a nice dinner with family on Christmas Eve as well. We open presents and tell stories while partaking in the eggnog, cookies and other treats of the season. It is nice.

Here is the main dish for this evening's dinner. Reverse seared prime rib cooked on the Big Green egg... yep it was good. No protection although it clearly needed it.

I bought a 6 bone one in size - had the bone removed.

Cut it up and vacuum sealed some, but tomorrow it's ON!

Yorkshire pudding to go with it too.

Mmmmm!

Now that is my kind of Prime Rib!! Perfectly done, that is one of my next challenges to put one on my pellet smoker vs. the egg ( I have both ) I hope mine looks nearly as good as yours!!

We are having one tomorrow, today it will be rack of lamb. Going to Sous Vide it, drop in cooler for drive to GFs fathers house and sear there. He hasn't left the house for two weeks with back pains, he was so excited to have us come. Hopefully the cooler will stay warm for 90 minute drive.

Preheat the cooler with a stockpot of boiling water.

I bring the water to a boil in my stockpot, put 1/2 the towels on bottom of cooler to prevent melting plastic, set the stockpot of boiling water in cooler, put other 1/2 of towels over the stockpot, close the lid, and don't open it until I'm ready to put in my tray of meet.
