DeqlynPlease educate me on Sockeye Salmon
i think I do my at 14 mins 350°. till the internal temp of 145, you're getting close when the clear part starts to turn white.

This. Although I think it happens at a lower temp. More like 135 or so. It's why I no longer use a probe with Salmon.
