Glad this thread came up ... as I was just thinking about how to make a lower salt version of Spam.

I've made that recipe (from the posted video) several times, and it's quite good. Hard to tell the difference from the real stuff. Very easy to lower the salt content, or add whatever else you might like. I've tossed around adding some horseradish powder or jalapenos.
