Advice on vacuum sealers (food) Login/Join

My first thought is Foodsaver, but I thought I’d check here. I’m going to start buying more bulk items and freezing as well as Sous vide cooking.

What manufacturers to you like?

For design, durability, and cost of bags, rolls, etc.

Any advice would be great. Thanks!

The step up from Foodsaver is Weston. They make commercial-grade vacuum sealers around $300-500 depending on size (they also make a couple of less expensive consumer-grade units).

People sometimes complain about Foodsaver units sometimes not making good seals in the bags. I've NEVER had anything less than a perfect seal with my Weston Pro-2300.

The next step up from there is a commercial chamber machine, they start around $1000. In a chamber machine, the machine doesn't just suck air out of the bag, you put the whole bag in a chamber that is pumped down to vacuum. The benefit is you can vacuum-seal liquids (soup, meat with a ton of marinade, etc.). A normal vacuum sealer will suck the liquid out of the bag.

Weston also makes very good pre-sized bags and continuous rolls that are thick and durable and have a texture on the inside that helps eliminate trapped bubbles.

For a brief moment, I considered a chamber vac. This could get pricey.

My suggestion (we have a FoodSaver).

Get a model that has the bag roll out and cutter built-in to the unit. It's a PITA to cut the bags and slows you down.

This. I like my Foodsaver just fine, but cutting (and wasting some of) the bags is a pain. I must say though, IF I do my part, the seal has always been solid.

I have owned my FoodSaver for years, and I just love this thing. I smoke a lot of different kinds of meat, then use the vacuum sealer to freeze it. It works great!!!

I have a Vac Master 550 Duo. It's a chamber and vacuum sealer in one unit. Think I paid somewhere around $600 about 5 years ago. Nice unit and has served me well. Chamber vacuum bags are about 1/3 the cost of the vacuum suction rolls and bags.
Spend the money up front on a chamber sealer and if you plan on using it quite often it will pay for itself in savings on the bags.

Weston or Vacmaster are worth the money. In comparison, the Food Savers I've had were slow and weak.

I have tried 2 different Foodsavers and 2 different brands of bags, for each.
Both have had problems with seal integrity. User error, I wonder?

Food saver works fine for me. I buy rolls, and use the built in slide cutter.

My Foodsaver worked very well for many years but when it finally gave up I stepped up to a VacMaster chamber machine. To say the least I am very happy with my choice. I was fortunate in that when the Foodsaver decided to expire I only had a couple of rolls left.

Food saver one has worked fine for me. I am not sure how I could justify paying 5 or 10 times as much for one. I know it can't possibly work five or ten times better.

Sure, might be user error.

The bags seal with heat. The machine presses the two halves of the opening together, and applies heat until the bags fuse.

A common problem is that people don't leave enough excess bag so that the two halves of the bag can lay perfectly flat against each other. If you've got some oddly shaped stuff in the bag, the two halves of the bag might not want to lay perfectly flat on the heating element--so you've got to help it lay flat by pulling the two sides of the bag out and leaving enough "tail" on the bag for the machine to clamp down on.

Also, marinades and stuff that get sucked up towards the opening might interfere with a good seal. Again, a little extra bag length and cutting off the vacuum pressure before the marinade gets drawn all the way to the opening will help.

Sometimes, I'll vaccum, seal, then move the bag out a half inch, and just seal again. Creates a double seal.

We have the cheap Foodsaver unit for hat Costco sells. It works perfectly. Most of our sealing is in preparation for Sous Vide cooking.

FoodSaver here, it just works. Follow the rules (directions) for great results. My current one deals with liquids, a big plus!!

I put them to WORK!! But they last an easy 5 years.

Jar sealers with Mason jars is a must have! I keep cereal, and other like products fresh for months/years with an oxygen absorber in the jar.
