Multiple suggested possible causes. Were I in your shoes I'd start with the easiest thing to test and eat beef from another source. (No Taco Bell). If all is well, eat something other than the beef in question, with the exact same marinade. If no explosions, you know it was the beef. also, you mentioned a local source, do they have any type of certification or inspection from the USDA or State Health dept?
