I remember being a beer swilling college student and finding a bottle of Bud Light in the back of my grandfather's fridge. He didn't know how long it had been there but best guess was 10+ years.
It had white floaties in it and tasted awful. At the time, I could choke down Falls City in a can (i.e. $1.99 for 24-pack) and this was FAR worse.

When I was fighting fires back in the early 80s we were eating WW2 C-Rats. Good shit...even after 40 years.
More recently, I cooked up some ribs the other day and slathered them with some BBQ sauce the I had canned up four years ago (didn't want to have to run into town.). Seal was still good and no botulism...yet.

10-15ish year old MREs. The mains were still fine but I didn't try any of the more likely to be questionable stuff like the applesauce, cheese, milkshake powders, etc., nor any of the long-expired commercial candy like the hard-as-rocks pack of Skittles.

10+ year out-of-date C rats (in the 1970's). Always edifying as an adult to be eating something that died when you were in grade school. Spaghetti and other tomato-based items were removed by the cooks for the botulism threat. Cigarette four-packs also removed by the cooks, who kept them for themselves.
Nothing wrong with the meals.

I ate a case or two of MRE's that were two years past their 10 year optimal window, or whatever term they use. They had been "liberated" by someone in the NG who was probably supposed to throw them away, instead they went in their car.
The only thing that was bad, the only thing I didn't eat was the hotdogs. They about knocked me over when I opened the package.

4 years ago I ate some tinned crackers with a 1963 date on them. They came from the basement bombshelter of a building my sister's employer bought for renovation. They were a white soda like cracker still perfectly shaped and packaged. The smell was off because the crackers smelled like the inside of a sealed ammo tin. They didn't taste good but it didnt make me sick. My sister one too.

I bought a hot dog at a hot dog stand once, back in H.S. Went to eat it, and it was green! However I was hungry and did not want to stand in line for a new one, so I ate it. Did not get sick, but it did taste weird.

Just to add another story that involved feeding the wife expired food.
I was rummaging in a backpack one day and at the bottom was a packet of 4 cheese instant mashed potatoes. It was the Idahoan brand from the grocery store.
They were 4 years beyond the BB date, but I rationalized that it was sealed, in a dark place so let's give it a whirl.
When I opened the packed it smelled skanky but I made them thinking that with enough butter, the wife eat anything.
I gave them to her and she said they tasted weird and I replied, "It must be the Romano you're smelling." She ate them and didn't get sick.

A pack of Nutter Butters, 4yrs expired, part of a Covid stache. They tasted bland, no ill effects.
I don't eat packaged powdered donuts anymore, even before the expiration date, the mold blends in too well and is not worth the time spent in the bathroom.

Not me, but I watched a video of the people who excavated the steamboat Arabia, which sunk in the Missouri River in 1856. Over the years the river changed course, and the Arabia was excavated from a farmer's cornfield near the river in 1988. The boat was full of supplies and hardware, and everything was pretty well preserved in the mud. They opened up a jar of pickles and ate them - said they tasted good.
