GustoferWhat are these things called?
I've determined my fall/winter project: A smokehouse similar to
this one...but probably a little bigger.I like the propane fed option, but I'm thinking of buying a mini Egg as well to do things old school, and vent the top into the structure.
What I'm planning are several 2" vent holes top and bottom and I would like to put some flat metal covers over those vent holes that will swing away and be secured with wingnuts. I'm at a loss here - What are those called, and can I find them premade in a (probably) 3" diameter and predrilled? Or, do I need to try to find someone locally who can make them for me?

HRKI think it was here where someone built one of those with a similar electric heater in the bottom vs fire/propane had a big thread on the stuff they smoked.
They attached a pellet smoker by running dryer exhaust hose to the bottom of the shed, let the pellet run on low smoke and that way you can either cold smoke or hot smoke.
You could get a used Traeger on FB marketplace to hook up..

MikeinNCMy dad used an old refrigerator for a smoking shack when we lived in Tampa-he had it laying around and it didn’t work anymore. He ran a 3” flex duct from a grill next to it, so it got cold smoke and he used it for smoking mullet and other meats. He would move the fire/grill further away if it got too hot in the shack and the fish would dry or the temp was too high
