I used to eat them, they were pretty good, but I only ate the Hams after flash frying and cooking them down with gravy and onions. Like lots of wild game, it how you cook it, there's not that much wild meat that can't be made pretty good to eat.

^^^^ What wrightd says. You have to know how to cook them but you also know how to clean them properly including removing the glands. I've eaten hundreds of them, mostly Fox squirrels, and they are a treat.

I haven't seen a fox squirrel down this way in 30 years. All gray.

I'm a hundred miles North of you but 50 years ago we only had Fox outside of the City. The grays are moving into my area these past 5-6 years. I still see a big red or black Fox squirrels at my bird feeders but Grays too.

Pop-pop had a board with a nail thru it. He’d slap the squirrel onto the nail(head), then ring the neck with his pocketknife, then grab the skin with a pair of pliers and pull the skin off. Guts fell out, chopped off the feet n hands n tail, then cut the neck. Meat went into a bag, when you got enough, throw em in a bag with flour or corn meal, salt n pepper and fry em like fish.

He did the same for catfish.
