I vacationed in Thailand four times while living in Singapore. I've only ever been to Phuket and the Phang Nga region. I'll try and find a few pictures etc. to post. I'd recommend the following activities:

Sea Kayak Tour

There are several companies, but John Gray is the original and was fantastic. I'd recommend the all day/night (Hong by Starlight) one where they provide someone to paddle the kayak. It's a wonderful tour with great guides and food. My whole family loved it and we ended up doing it three times over those four trips.

We did a day tour with snorkeling and lunch on Koh Phi Phi. We had a great time and got to see a bunch of the area, with some amazing views and visits to some famous areas.

Besides Phuket you could look at Krabi (close to Phuket), Khao Lak, and Koh Samui. All of these were pretty popular with expats when I was living in SG.

My wife went on a couple girls trips to Bangkok and went with her sister to Chiang Mai. Bangkok is mainly shopping and "shows." Chiang Mai is a lot more cultural and with some nature tours.

Just remember that for food, Thai spicy is not the same as American spicy.

My Son ate the Jungle Curry in Kanchanaburi,along the shore of the river Kwai. He likes spicy.
He had sweat rolling down his forehead and gasped for air, but he ate the entire bowl.
