That being said, that cockatoo could seriously hurt the dog too, they have an extremely strong bite. Our cockatoo could tear apart most any piece of wood when he was bored. Then he would sit in my lap and pretend bite my fingers. Definitely an exercise in trust.
Boxers are great friendly dogs though. Apparently when they like you they have a "bean" dance where they curl up, point both ends at you and prance at you. I thought the dog was having a damn seizure first time I saw that.
In theory, you're correct. But this is obviously not the first time these two have interacted, and they clearly have the rules of play worked out. If anything the bird is the dominant one in the relationship.
If anything bad was going to happen, it likely would have already.

I own parrots and if I did have a dog, they would never be able to interact.
The same goes for allowing a large parrot to be with smaller birds. I have seen some horrible injuries to birds from situations like these.

Was thinking the same thing. Even a very good natured dog could accidentally step on, roll on, or bite that bird playing with them.

No guarantees something bad won't happen, but they've been friends for a long time, apparently. This is an animal rescue where they have 5 or more dogs around all kinds of farm animals of all ages and sizes, so I think the dogs are pretty savvy.
