For starters, herbed mayo (seasoning salt, black pepper, dill weed, and Cholula Green Pepper hot sauce) mixed in one cup. And Branston Pickle, an excellent condiment, in another: I divided 6 ounces of 22% fat Wagyu ground beef into two 3 oz patties. Parchment paper over them, then smashed both simultaneously on my AUS-ION steel griddle with the Blackstone smashing tool (~1/4” deep). I smashed them down good – “metal-to-metal”, as Tom Ryan, SmashBurger founder, says in this two-minute video: https://youtu.be/8E__VJM_AUw I had to take my hands off the Blackstone to make the photo, though. The patties are ready to flip: Flipped the patties to brown their other sides and moved them to a pate. My “bun” is unconventional. I put two slices of German-baked Mestemacher pumpernickel into the grease to toast/fry, making them crispy-crunchy. Spread the herbed mayo onto the pumpernickel, piled on both patties, and began eating. Not enough room on the burger for the pickle, so I just took a bight of burger, then a spoonful of pickle, and chewed both together. Repeat. No more photos for awhile now – my fingers are way too messy! Good! The AUS-ION steel griddle is unusual: it’s the only one I know of whose handle is an integral part of the pan. All others have a handle that’s riveted or welded on. And it’s a long handle. I think its maker sends a lot of scrap back to the smelter. Its surface is bead-blasted to hold the seasoning. It appears that you left out one of the main ingredients in your recipe. In the first photo ....so how much Semichrome polish do I need to add ?? | |||

^^^^^^^^ You are eagle-eyed. I was using Happich Simichrome to remove a stain from the blade of an ancient kitchen knife. An excellent product for that purpose, but not for smash burgers! Serious about crackers | |||

Nice presentation, what for the silver polish (I'll pass on that ingredient) My Wife is from Cape Town and straight away noticed the jar of Marmite and wonders where you bought it ? She says many from SA love it but can not find it. Enjoy the fruits...smash-burgers of your labor I bet you do !! ^^^^^^^^ Your wife is eagle-eyed too. I buy Marmite on Amazon. But that’s an old photo, when I still bought the little 125g jars. Nowadays I buy these 600g tubs: www.amazon.com/dp/B01MTMVMIA/r..._api_i_gvPZEbNMAQS65 Their wide opening makes it much easier to get the Marmite out without fouling the rim. And I don’t have to order so often. Every evening I bake a 2oz piece of Marie Callender cornbread, or a 2oz piece of Betty Crocker Garlic & Cheese biscuit. Then I spread it with Marmite and peanut butter. It is sooo delish! Serious about crackers | |||
