I have not found any good Mexican restaurants here in South Korea yet. May have to celebrate when we get home next week.

I've tried pretty much every taco on the menu except the fake meat one and the vegetarian one. Generally, I get a half order of queso, their taco of the month and rotate one of these:

(secret menu) green chili pork missionary style (it's better than their regular green chili pork)
chicken fajita
Mr Orange (blackened salmon)
(secret menu) Ace of Spades (jalapeno cheddar sausage, brisket, and fried egg)
Give me a Trailer Park, but make it trashy (minus veggies, add queso).

lastmanstandingHad my own Cinco De Mayo celebration. Kids and grand kids came over. Fired up the margarita machine and made fajitas, quesadillas with chicken and chorizo, esquites (Mexican street corn) off the cob, fire roasted salsa in the molcajete, and guac.
More Americans celebrate Cinco De Mayo than Mexicans according to most of what is written about the holiday. I think because so many Americans love Mexican cuisine and it's a good excuse to put the Mexican feed bag on. Besides it's my birthday!

Puzzled. “Campechanas” was an unknown to me so I googled and found several descriptions saying it was a Mexican seafood cocktail. E.g.:

tatortoddI've always thought of campechena as the Mexican version of seafood/shrimp cocktail. IMO, the best appetizer in all of Houston is a
shrimp & crab Mexican cocktail at Goode Company. A little Googling lead to finding it's also the name for a Mexican puff pastry.

ElToroI grew up in San Jose CA. The Bay Area has a huge Hispanic population and consequently the ability obtain amazing food was legit. Here in the Florida panhandle we have Mexican restaurants buy they are meh. So yes it’s a lame holiday especially in America to celebrate, but back in San Jose, when coworkers of Mexican heritage in the office organize and want to bring in aluminum trays of all kinds of home cooked goodness and the company is ok with people folks chugging modelo and tequila shots and calling the afternoon off, who am I to say no.

Well, I’ll have to tell Tommy Ramos his deluxe campechanas are wrong. (like he’s going to care) He makes them with tortilla chips, ground meat, refried beans, cheese, guacamole, lettuce and tomato. Fresh jalapeños, too, if you want. I’m pretty sure his recipe would handily outsell the octopus version, here.
