I don't eat a lot of bacon anymore, not because I don't love it, and I do so love my bacon, but for both health/ weight loss reasons, and because it has gotten stupid expensive lately. But, when I do treat myself and eat bacon I always save the leftover grease in an old Spam can. Leftover bacon grease is great for most any frying duties, and also great as a 'butter' on dishes like pasta. Gotta try that popcorn in bacon grease trick now, sounds delicious! | |||

Been doing that for years. Popped on the stove, of course. A heaping spoon full of bacon grease and a gurgle (about the same amount) of vegetable oil will completely cover the bottom of a large pot. Let it heat on medium (5 for my stove) and throw in 3-5 kernels. When those pop it's time to put in a half cup (heaping of course) of popcorn and cover. Keep moving the pot around on the heat to avoid un-popped kernels. You can also lift it a bit side to side to make sure the oil moves around to completely cover all parts of the bottom. After it stops popping put a big serving bowl in your sink and dump it in there. It's now ready for popcorn salt. * You can put the pot in the sink when you remove the popcorn bowl, but don't put water in until it cools a bit. "Some things are apparent. I used to have a dedicated popcorn popper with a stirrer, and I used bacon grease in it. It smells wonderful while popping, but it doesn't really have much effect on the taste. flashguy Texan by choice, not accident of birth | |||

Use it to season fresh green beans: stewed southern-style, none of those nasty crisp ones. Cook home fries, preferably with onion, in bacon grease. Use a big spoonful to season any dried beans you cook. | |||

In honor of this thread, Mrs. Flash and I went out and bought and vacuum sealed 8 pounds of thick sliced Chipotle bacon. I'll try some tomorrow. | |||

My momma always had a coffee can full of bacon grease setting on the stove. She made THE BEST wilted leaf lettuce salad using hot bacon grease and green onions.....yum!! | |||

My mom's bacon grease container was a green glazed mug, I can see and smell it still. My wife did not follow this practice, consequently I have outlived my Dad by at least 7 years. My folks used to like to tell the story that when we were on the road and there was a motel that had a "No Vacancy" sign lit, one of us little ones would yell "No Bacon Grease!". _________________________ “Remember, remember the fifth of November!" | |||

Both of my grandmothers as well as my mother kept a small container of bacon grease on the kitchen stove................... some of the best cooking and seasoning ingredient ever used. Can"t convince the wife to use it. Have to do it myself if I want any bacon grease seasoning. ........................ drill sgt. | |||

I keep a little mason jar full of bacon grease, to use for eggs, toasting bread in a pan, and whatever else comes up. One of the smallest, half height, jelly jars... 4oz maybe. | |||

Heck, I used to cook the bacon in the popcorn maker, chop it up in bits, and then make the popcorn in the grease. Then I would add the bacon bits back in and devour it. "Someday I hope to be half the man my bird-dog thinks I am." looking forward to 4 years of TRUMP! | |||

How long will bacon grease be good for if: 1) refrigerated 2) frozen I keep all the drippings but don't use them as fast as they collect. | |||

My folks mostly kept it on the stove top, but later in life they gravitated to the refrigerator. Although many of us grew up with relatives who stored their bacon grease in a jar or can set on the counter or on the back of the stovetop, food safety experts don’t recommend storing it that way now. Instead, store the grease in the refrigerator (up to 3 months) or freezer (indefinitely). The refrigerator is best because the fat will stay soft enough to scoop, so you can have delicious solid drippings at the ready. | |||
