I've been using a vacuum sealer for over 10 years and love it. The Food Saver brand is light duty and I have replaced it a number of times but this year I upgraded to a more robust unit and I'm so glad I did.
You spent the bucks on a nice chuck of meat, don't let freezer burn ruin it, seal it good.

Same here. No way I would leave meat just in butcher's paper.
If you get a vacuum sealer you can do a LOT more than just suck-seal food.
(one way to REALLY shrink the size of the bandages in your ouch pouch)

This paper does have a film on the inside.
Putting the already wrapped pieces in Ziploc bags and getting as much air out as you can, or vacuum sealing them (in the butcher paper) will extend the life a bit. But I've had stuff last a long time in the plastic coated butchers paper.
