I was looking for a decent SS frying pan. Some of ‘em have five layers. I expected that the five layers would be: SS Al SS Al SS But no, it’s: SS MM Al MM SS Where MM is Mystery Metal. Here’s an example (see picture #2): Misen Stainless Steel Frying Pan - 5 Ply https://www.amazon.com/dp/B08W...KG8P4242TQ307PYGBT2P What is the Mystery Metal and what is its purpose? Maybe the three-layer (SS Al SS) fry pans deform on a hot stove (going concave or convex), and the Mystery Metal layers reduce that effect. Any other guesses for the “purpose” question? Reviews all seem to say the middle three plies are all aluminum. Not sure why the company’s product literature is unclear. | |||

Looking at the pic you referenced, it looks like it could be ss al mm al ss. Using the term "alloy core" suggest to me it's the center layer that's the mm. The Misen website says the pan is a stainless/al composite so it makes sense the mm is an al alloy. | |||

I don't think those pans are pricy enough to have a copper layer and if it was copper they would be crowing about it. A couple of my All Clad pans have a copper layer in the core but they were far more expensive. They heat the most evenly of any pans I have ever owned. Any pot/pan with copper you can add an additional $100-150 to the standard pricing. Misen are decent but, Chinese made cookware. | |||
