I regret not buying a M151 Ford Jeep that was pristine for $7600 in ~1992 and a Toyota FJ 40 that was pristine in about the same time.
I was fresh out of college and was making very little still.

Did you see the 1987 FC that I'm working on for a friend?
I stitched a new interior for it and we painted it this summer.

I just painted a set of wheels for it too.

It probably still wouldn't be worth that much these days, but we had a pretty clean 91 Mustang LX convertible with a NA 2.3 that I bought "for my wife". 0-60 time was like 18 seconds, but it was fun to bum around town in. I had dreams of turbo swapping it, but we started having more kids and a 4-seat convertible didn't make any sense for a family of 6. We ended up selling it and I bought a little fishing boat, which has been an endless source of good times with the kids, but I do miss that car.

It looked kinda like this (pic from the internet, not my car), but ours had a black roof:
