Most mornings I walk to Whole Foods to get provisions for lunch and supper. One of their offerings is Belgian endive. In a sealed cellophane package with two or three heads, depending on size. Crisp and flavorful, with a slightly bitter aspect which agrees with me. I find them to be a nice change up from my usual fare. Prep is negligible. I put some salad dressing in a suitable container and add freshly ground pepper. Then I grasp one of the torpedo-shaped heads by its cut stem end, dip the far end in the dressing, insert into mouth, and chew. Yasser! You can also chop them up and mix with other salad greens. Some folks cook them. Each cat in his own bag, I always say. Belgian Endive 101 https://www.liveeatlearn.com/belgian-endive/ My choice of salad dressing for this nifty veggie is Hidden Valley Ranch. I put it into one of my ancient Corelle hook-handle coffee cups. Shaped rather like a truncated cone, the narrow bottom keeps the dressing localized.
