I love pasta and noodles but trying to eat rice noodles over wheat. I’m finding various brands from Vietnam and Thailand. Small to extra large width. I’m not used to buying rice noodles. Any recommendations in size and brand? VN vs Thai? What’s the most versatile for home use? Like noodles in soup. Cool, thanks. I look for it. The most prominent brand on the shelf at the market I checked seemed to be Three Ladies (??; VN brand?). But they had more than a dozen different brands, mostly from VN or Thai. Not sure if there is any difference between VN and Thai rice noodles or if basically all the same.
